Vinegar - importance in the food industry and influence on human health

Abstract:

Tato bakalářská práce pojednává o různých druzích octa podle země původu a vlivu octa na lidské zdraví. Je zde popsána historie a vznik octa, legislativní požadavky na výrobu nebo zaběhlé a novodobé způsoby výroby octa. Práce se zabývá i mikrobiální podstatou octa a možnostmi falšování octa nebo jeho dopady na lidskou společnost. Závěr práce je věnován senzorické analýze tří ochucených octů a hodnocení odpovědí respondentů různých věkových skupin.

Abstract:

This bachelor's thesis discusses the different types of vinegar according to the country of origin and the effect of vinegar on human health. The history and creation of vinegar, legislative requirements or well-established and modern methods of vinegar production are described. The work also deals with the microbial essence of vinegar or the possibilities of vinegar falsification and its effects on human society. The conclusion of the thesis is devoted to the sensory analysis of three flavored vinegars and the evaluation of the responses of respondents of different age groups.
