Monitoring of Acrylamide Levels in Barley and Malt in Malt Production Technology
Abstract:
Diplomová práce je zaměřena na sledování obsahu akrylamidu v ječmeni a sladu v průběhu hvozdění sladu. Akrylamid je považovaný za pravděpodobný karcinogen pro člověka. V potravinách vzniká v průběhu Maillardovy reakce a jeho prekurzory jsou redukující cukry a aminokyselina asparagin. Abstract:
The thesis is focused on the monitoring of acrylamide levels in barley and malt during kilning malt. Acrylamide is considered as a probable human carcinogen. It is formed during the Maillard reaction in the food and its precursors are reducing sugars and amino acid asparagine.
