Texture parameters of sticks with the addition of insect powder during storage

Abstract:

Diplomová práce se zabývala texturními vlastnostmi tyčinek s přídavkem cvrččího prášku s různými příchutěmi v průběhu skladování v plastovém obalu a v celofánové folii. Pevnost byla stanovena pomocí přístroje Tiratest 27 025 u tyčinek s přídavkem cvrččího prášku ve třech provedeních: s příchutí chilli, s žitnou moukou a se sýrem. Průměrná pevnost tyčinek s chilli v plastovém obalu byla 21,50 N až 23,22 N, v celofánu 20,64 N až 23,44 N, s žitnou moukou v plastovém obalu 37,64 N až 40,65 N, v celofánu 36,01 N až 40,96 N, s příchutí sýru v plastovém obalu 26,94 N až 29,09 N, v celofánu 26,59 N až 29,46 N. Mezi výsledky stanovení průměrné pevnosti u jednoho druhu tyčinek v průběhu skladování byl zjištěn statisticky průkazný rozdíl (p < 0,05). Jsou také patrné rozdíly v pevnosti tyčinek během skladování v plastovém a celofánovém obalu, mezi vzorky v různých obalech však nebyla zjištěna statistická průkaznost rozdílu (p > 0,05).

Abstract:

The thesis dealt with the monitoring of textural properties of sticks with the addition of cricket powder with different flavours during storage in plastic packaging and in cellophane film. The hardness was determined using the Tiratest 27 025 for the cricket powder sticks in three flavours: chilli, rye flour and cheese. The average hardness of the chilli-flavoured sticks in the plastic cover were 21.50 N to 23.22 N, in the cellophane 20.64 N to 23.44 N, with rye flour in the plastic cover were 37.64 N to 40.65 N, in the cellophane 36.01 N to 40.96 N, with cheese flavour in the plastic cover were 26.94 N to 29.09 N, in the cellophane 26.59 N to 29.46 N. A statistically significant difference (p < 0.05) was found between the results of the average hardness determination of one type of sticks during storage. There are also differences in the hardness of the sticks during storage in plastic and cellophane packaging, but no statistically significant difference was found between samples in different packaging (p > 0.05).
