Ecological and economical kitchen

Abstract:

This diploma thesis is dealing with ecological and economical kitchen. Especially with gastronomy in restaurants in Žilina. This topic is divided into three chapters. The first chapter is dealing with the terms - ecology, ecological kitchen, history of kitchen and groceries, especially bio groceries, which could be essential for the quality in the restaurant´s kitchen and they are a trend in the present. The goal of the diploma thesis was the analysis of the appliances of existing kitchens, of their ecological and economical aspects. A large part of my attention was give to waste technology, energy efficient appliances, I visited and analysed the premises in relation to their ecological and economical side of management. In this part I attache the discussion with premises managers and questionnaire, that gives us the point of view of the respondents as far as the forms of cuisine, ecology and energy saving goes. In the next part I suggest, upon the gained information, the enhancements of slovakian gastronomical premises by enhancing the ecological technologies, by exchanging the appliances with more energy efficient ones according to the energy certificates. Because appliances that have the energy certificate of A+++ help to preserve the environment and save the energy costs. In the end I advise the possibilities of preserving the environment.

Abstract:

V diplomovej práci sa pojednáva o ekologickej a ekonomickej kuchyni. Predovšetkým sa jedná o gastronómiu v reštauračných zariadeniach mesta Žilina. Tému som spracovala v troch kapitolách. Zaoberala som sa pojmom ekológia , históriou kuchyne, ekologickou kuchyňou, ekonómiou v kuchyni, ekologickými materiálmi, dispozičným riešením kuchyne , potravinami, obzvlášť bio potravinami , ktoré práve môžu byť základom pre fungovanie kvalitných reštauračných zariadení a sú trendom súčasnosti. Cieľom práce bolo zanalyzovanie zariadení v konkrétnych reštauráciách, respektíve ich ekologických a ekonomických parametrov. Veľkú pozornosť som sústreďovala práve odpadovej technológii, úsporným spotrebičom, navštívila som a zanalyzovala jednotlivé prevádzky vo vzťahu k ekológii a ku ekonomickej stránky hospodárenia. V tejto časti práce prikladám rozhovory s vedúcimi prevádzky a dotazníkové šetrenie, ktoré nám priƅlíži pohľad respondentov na formy stravovania, ekológiu a úspornosť. V závere na základe získaných informácii navrhujem možnosti vylepšenia slovenských gastronomických zariadení a to nahradením technológii úspornejšími technológiami, zavedením úsporných spotrebičov na základe energetických štítkov, priblížime si alternatívne riešenia likvidácie odpadov a povieme si návrhy pre ekologické opatrenia k šetrnejšiemu zaobchádzaniu so životným prostredím.
