Abstract:
Diplomová práce se zabývá analýzou technologických vlastností nové odrůdy pšenice s deep-purple barvou zrna. U vzorků mouky o rozdílné granulaci byly stanoveny základní kvalitativní parametry, a to vlhkost, obsah mokrého lepku, Zelenyho test a číslo poklesu. Abstract:
This thesis focuses on an analysis of technical features of the new wheat variety with deep-purple grain color. Samples of flour of different granularity were classified in basic qualitative parameters, e.g. humidity, content of wet gluten, Zeleny test and falling number.
