The production of cheese analogues through 3D printing

Abstract:

Hlavním tématem diplomové práce je výroba sýrových analogů a jejich následný 3D tisk. První kapitola práce pojednává o obecné charakteristice sýrových analogů, jako například důvody a výhody výroby sýrových analogů. Sýrové analogy jsou částečně/pouze rostlinného původu, které maximálně napodobují vzhled, texturu a chuť živočišných produktů. Další část práce je zaměřena na vstupní suroviny, rozdělení a na způsoby výroby sýrových analogů. Analogy sýrů jsou homogenní matrice podobné sýru, které se dělí na mléčné, částečně mléčné a nemléčné, podle zdroje složek použitých v jejich složení. Další skupinou analogů jsou analogy na bázi tofu. Poslední kapitola literární rešerše rozebírá parametry 3D tiskárny a samotný tisk s možným využitím, výhodami a nevýhodami tisku. V experimentální části bylo připraveno 13 variant sýrových analogů, které vycházely ze zvolené výchozí receptury a byly obohaceny o přísady (hrachový protein, ovesná mouka), nebo byly nahrazeny základní přísady jejich alternativami. Následně byly varianty sýrových analogů tisknuty na 3D tiskárně Procusini, kde se vizuálně hodnotila zpracovatelnost, tisknutelnost a výsledný geometrický tvar. Senzorické hodnocení jednotlivých deskriptorů se provedlo u 2 zvolených obohacených sýrových analogů. Zvolené analogy byly vybrány na základě výsledné tisknutelnosti a potencionálního rozdílu v chuti.

Abstract:

The main topic of the thesis is the production of cheese analogues and their subsequent 3D printing. The first chapter of the work discusses the general characteristics of cheese analogues, such as the reasons and advantages of producing cheese analogues. Cheese analogues are partly/only of vegetable origin, and they mimic the appearance, texture and taste of animal products as much as possible. The next part of the work focuses on feedstocks, distribution and methods of production of cheese analogues. Cheese analogues are homogeneous matrices similar to cheese, which are divided into dairy, semi-dairy and non-dairy, according to the source of the ingredients used in their composition. Another group of analogues are tofu-based analogues. The last chapter focuses on literary review and analyzes the parameters of the 3D printer and the printing itself with its possible uses, advantages and disadvantages of printing. In the experimental part, 13 variants of cheese analogues were prepared, based on the selected initial recipe. The variants were either enriched with ingredients (pea protein, oat flour), or the basic ingredients were replaced by their alternatives. Subsequently, the cheese analogue variants were printed on a Procusini 3D printer, where the workability, printability and resulting geometric shape were visually evaluated. Sensory evaluation of individual descriptors was carried out for 2 selected enriched cheese analogues. The analogues chosen were based on the resulting printability and the potential difference in taste.
