Abstract:

Tato práce se zabývá využitím vybraných (škroby, soja, hydrokoloidy) vodovazných aditiv v masném průmyslu. U těchto vybraných aditiv jsou rozebrány legislativní požadavky na jejich povolení při výrobě potravin, omezení v určitých aplikacích nebo jejich nejvýše povolené množství v konečných produktech. U jednotlivých aditiviv jsou pak popsány jejich chemické vlastnosti a možnosti jejich použití při výrobě masných výrobků. Součástí práce jsou i fotografie vybraných masných výrobků.

Abstract:

This work deals with the use of selected (starch, soy, hydrocolloids) vodovazných additives in the meat industry. For these selected additives are discussed legislative requirements for their license in the manufacture of food restrictions in certain applications or the maximum allowable amount in the final products. For each aditiviv are then described their properties and their potential use in the manufacture of meat products. Part of this work are photographs of selected meat products.
