Prediction of gushing in raw materials for beer production

Abstract:

Diplomová práce je zaměřena na predikci gushingu v surovinách pro výrobu piva, konkrétně v ječmenech a sladech různých odrůd. Literární část je věnována popisu surovin používaných při výrobě piva a procesu výroby sladu. Dále obsahuje charakteristiku gushingu, jeho klasifikaci a uvádí možné metody pro jeho stanovení a postupy k potlačení tohoto jevu. Praktická část se zaměřuje na vlastní stanovení gushingu gravimetricky v zrnech ječmene či sladu a stanovení čísla poklesu chronometricky. Výsledné hodnoty čísla poklesu a gushingu byly následně statisticky porovnány a vyhodnoceny v závislosti na druhu sladovnické odrůdy a v závislosti na použité vstupní surovině. Nebyla potvrzena hypotéza, že pro predikci gushingu lze využít surové zrno ječmene místo sladu. Výsledky však potvrdily, že na gushing má vliv odrůda, sladování zrn ječmene a porostlost zrna.

Abstract:

The thesis is focused on the prediction of gushing in raw materials for beer production, namely in barley and malts of different varieties. The literature part is devoted to the description of raw materials used in beer production and the malting process. It also contains a description of gushing, its classification and presents possible methods for its determination and procedures to combat this phenomenon. The practical part is focused on the actual determination of gushing by gravimetry in barley or malt and the determination of the falling number by chronometry. The resulting values of falling number and gushing were statistically compared and evaluated depending on the type of malt variety and depending on the used feedstock. The hypothesis that raw barley grain can be used instead of malt to predict gushing was not confirmed. However, the results confirmed that gushing is influenced by variety, malting of barley grain and grain cover.
