Analysis of an Operation of a Tasting Restaurant "La Degustation Boheme Bourgeoise"

Abstract:

Cílem diplomové práce Analýza provozu degustační restaurace "La Degustation Bohême Bourgeoise" je analyzovat provoz konkrétní degustační restaurace a odhalit jeho specifika. Zároveň zde jsou navrženy možnosti nápravy zjištěných nedostatků v rámci provozu. Při realizaci rozboru provozu restaurace vycházíme zejména z primárních dat získaných zúčastněným pozorováním chodu restaurace. Podstatnou metodu pro zpracování problematiky představují řízené rozhovory s vedoucími zaměstnanci provozovny. Součástí výzkumu je také analýza dat dostupných v rezervačních knihách podniku. Cílem analýzy tohoto zdroje je specifikace zákazníků provozovny v rámci stanovených kategorií. Zdroj sekundárních dat pro analytickou část práce představují čtvrtletník A: S jídlem roste chuť a měsíčník A noviny vydávaný skupinou Ambiente. Stanovená hypotéza zaměřená na vztah počtu pracovníků, počtu chodů v menu a doporučený počet pracovníků nebyla vyvrácena. Dále bylo odhaleno několik specifik a méně závažných nedostatků v provozu restaurace. V závěru návrhové části práce jsou navržena možná řešení zjištěných problémů.

Abstract:

The aim of this dissertation Analysis of an operation of the degustation restaurant "La Degustation Bohême Bourgeoise" is to analyse operation of particular degustation restaurant and to reveal its specifics. Simultaneously there are proposed options for rectification of established shortages within the operation. During an implementation of the analysis of operation of the restaurant we particularly proceed from primary data established throug a partaking observation of operation of the restaurant. Substantive method for processing a problem constitute controlled interviews with managing employees of business premises. The part of the study is also analysis of data available in reservation books of the business. The objective of this analysis of this source is a specification of business premises customer within set categories. Source of secondary data for analytic part of this work are represented by a quarterly A: S jídlem roste chuť and monthly A noviny both published by Ambiente group. Stated hypothesis aimed at relationships between number of workers, number of courses in the menu and recommended number of workers was not aproved. Further there were revealed several specifics and minor drawbacks in operation of the restaurant. In conclusion of a proposal part of the work there are proposed possible solutions of established problems.
