Abstract:
Bakalářská práce se zabývá formulací a charakterizací emulzí stabilizovaných pomocí komplexu protein - polysacharid. Proteinovou složku v těchto komplexech tvoří kaseinát sodný a jako polysacharid byl zvolen chitosan. Praktická část se pak věnuje přípravě samotných roztoků polymerů a tvorbě jejich komplexů. V konečné fázi se práce věnuje přípravě emulzí stabilizovaných vyhovujícími komplexy.Abstract:
The bachelor thesis deals with the formulation and characterization of emulsions stabilized with protein-polysaccharide complexes. In the complexes, sodium caseinate and chitosan were chosen as the protein and polysaccharide, respectively.
