The change of muffins´ quality by adding chia seeds

Abstract:

Diplomová práce pojednává o výrobě muffinů s přídavkem chia semen. První část literární rešerše se zaměřuje na základní charakteristiku chia semen, oblasti pěstování, botanické zařazení, anatomickou stavbu semene a legislativní ošetření. Popisuje vybrané nutriční složky a konkretizuje jejich prospěšné účinky na lidské zdraví. Z hladké a špaldové mouky (1:1) byly upečeny muffiny s přídavkem slizu z rozemletých a celých chia semen v množství 2 %, 4 %, 6 %, 8 %, 10 %. U hotových výrobků byla stanovena objemová výtěžnost, objem, výpek, tvar a pevnost. Pomocí nestrukturované 10 cm grafické stupnice byla provedena senzorická analýza základních smyslových deskriptorů a stanovena energetická hodnota. Výsledky byly vyhodnoceny programem STATISTICA 12. Objemová výtěžnost, pevnost, pružnost a pórovitost klesala s přídavkem obou typů chia slizu. Senzoricky nejpřijatelnější byl výrobek s přídavkem 2 % chia slizu z rozdrcených semen a s přídavkem 10 % chia slizu z celých semen. Nutričně nejvhodnějšími muffiny byly s přídavkem 10 % obou typů chia slizu.

Abstract:

The diploma thesis deals with the production of muffins with the addition of chia seeds. Literature review focuses on the basic characteristic of chia seeds, areas, botanical classification, anatomical structure of seeds and legislative treatment. It describes selected nutritional components and specifies their beneficial effects on human health. From smooth and spelled flour (1:1) muffins were baked with added ground and whole chia seed´s slime. The seeds were used in the amount of 2 %, 4 %, 6 %, 8 %, 10 %. In finished products, the volume yield, volume, baking shape and strength were determined. Using an unstructured 10 cm graphic scale, a sensory analysis of the basic sensory descriptors was performed and the energy value was determined. The results evaluated by using the STATISTICA 12 program. The volume yield, strength, elasticity and porosity decreased with the addition of both types of chia slime. The most sensory acceptance was the product with the addition of 2 % chia seed slime from crushed seeds and with the addition of 10 % chia seed slime from whole seeds. The most nutritionally suitable muffins were with the addition of 10 % both type of chia seed slime.
