Wine and Food Pairing

Abstract:

Bachelor dissertation "Wine and Food Pairing" is developed to serve as an introduction to the topic of pairing wine with food and enogastronomy in general. The object of the bachelor thesis is to discover the best and most suitable combinations, to find the context between them and by that context to verify the opinions for suitable pairings. In the theoretical part I will define the basic concepts of wine, food and their pairings. In the analytical part I will organize five different enogastronomic evenings at the Vino dei vini wine bar. I will prepare the menus and then lead quantitative and qualitative research with everybody involved in degustation. I will be using results from these researches also in the design part where I will focus on the way of wine production and based on that I will propose the best attributes for suitable wine and food pairing. Results shows that wine production has an impact on individual aspects of wine and food pairing. Research has also shown that dry wines are best suited to be paired with salty starters and main dishes.

Abstract:

Bakalárska práca na tému ,,Víno a párovanie vína s jedlom" je vypracovaná tak, aby mohla slúžiť ako úvod do problematiky párovania vína s jedlom a celkovo enogastronómie. Cieľom bakalárskej práce je objaviť tie najlepšie a najvhodnejšie kombinácie, nájsť medzi nimi súvislosti a na ich základe podložiť tvrdenia o vhodných párovaniach. V teoretickej časti budem definovať základné pojmy týkajúce sa vína, jedla a ich snúbenia. V analitickej časti zorganizujem päť rôznych enogastronomických večerov v priestoroch vinotéky Vino dei vini. Pripravím podávané menu a následne budem viesť kvantitatívny a kvalitatívny výskum so zúčastnenými degustácie. Z týchto výskumov následne vytvorím názorné zhodnotenia daných kombinácií. S výstupmi analitickej časti budem pracovať aj v návrhovej časti, kde sa zameriam na spôsob výroby vína, na základe čoho navrhnem najlepšie atribúty vína vhodné na párovanie s jedlom. Z výsledkov vyplíva, že výroba vína má vplyv na jednotlivé aspekty párovania vína s jedlom. Výskumom bolo mimo iné zistené aj to, že suché vína sú najvhodnejšie pri párovaní k slaným predjedlám a hlavným jedlám.
