Oxidative changes of vegetable oils

Abstract:

Tato diplomová práce se zabývá sledováním oxidačních změn rostlinných olejů. Oxidace může být urychlena například vysokým obsahem polynenasycených mastných kyselin, zvýšenou teplotou, přísunem světla, nevhodnými skladovacími podmínkami a další. V teoretické části byly popsány druhy rostlinných olejů, a především byly popsány analytické postupy, kterými se stanovují primární oxidační produkty rostlinných olejů jako je peroxidové číslo, anisidinové či thiobarbiturové číslo. Také byly popsány metody urychlené oxidace jako je Schaalův test, postup Rancimat či metoda aktivního kyslíku. V experimentální části byly studovány oxidační změny meruňkového, šípkového, švestkového a malinového oleje. U nichž byla měřena jejich hodnota peroxidového čísla v čase a při různých skladovacích podmínkách. Vzorky rostlinných olejů byly uloženy v lahvičkách ze skla tmavého, čirého a do lahviček z čirého skla s přídavkem antioxidantu. Plynovou chromatografií bylo zjištěno složení mastných kyselin olejů. Dále byly u vzorků získány indukční časy pro urychlenou oxidaci pomocí přístroje Rancimat 892.

Abstract:

This diploma thesis deals with the monitoring of oxidative changes in vegetable oils. Oxidation can be accelerated, for example, by a high content of polyunsaturated fatty acids, increased temperature, light, unsuitable storage conditions and others. In the theoretical part, the types of vegetable oils were described, and above all, the analytical procedures used to determine the primary oxidation products of vegetable oils, such as the peroxide number, anisidine or thiobarbiturate number, were described. Accelerated oxidation methods such as the Schaal test, the Rancimat procedure or the active oxygen method were also described. In the experimental part, the oxidation changes of apricot, rosehip, plum and raspberry oils were studied. For which their peroxide value was measured over time and under different storage conditions. Samples of vegetable oils were stored in bottles made of dark, clear glass and in bottles made of clear glass with the addition of an antioxidant. The fatty acid composition of the oils was determined by gas chromatography. Furthermore, induction times for accelerated oxidation were obtained for the samples using a Rancimat 892 instrument.
