Koncept hotela s nulovým odpadom v Českej republike

Abstract:

Hlavným cieľom bakalárskej práce je zdokonaliť koncepciu hotela s nulovým odpadom s dôrazom na environmentálny pilier, navrhnúť a interpretovať odporúčania vybranému hotelu s názvom Kolej Akademie, ktorý pôsobí v českom hotelovom priemysle. Prehľad literatúry poskytuje hlbší pohľad na danú oblasť spoločenskej zodpovednosti firiem a obežného hospodárstva, ktoré je nevyhnutné pochopiť. Metodika sa týka konkrétnych oblastí odvodených od noriem ISO 9001 a ISO 14001. Analytická časť je založená na kvalitatívnom výskume hĺbkových rozhovorov, ktoré naznačujú niekoľko oblastí možného zlepšenia. Ilustrácia radarového grafu na základe zistení z rozhovorov pomáha odhaliť, že Kolej Akademie investovala značné prostriedky a úsilie na transformáciu hotela na zariadenie bezobalového charakteru, ale na druhej strane stále čelí oblastiam, ktoré neboli vôbec pokryté. Významná zmena sa uskutočnila v politike na úspory vody a energie, ako aj v kuchynských procesoch, ktorými sa výrazne znížilo množstvo odpadu. Sekundárny výskum údajov bol uskutočnený, s cieľom určiť oblasti, ktoré by mohla Kolej Akademie vylepšiť. Výsledky ukazujú, že Kolej Akademie stále nakupuje hotelovú kozmetiku v malých plastových fľašiach a niektoré druhy balených potravín, ktoré prispievajú k množstvu jednorázového odpadu. Hotel nevenuje pozornosť propagácii hotela ako bezobalové zariadenia a príliš nepodnecuje hostí, aby sa zapojili do ich ekologického programu. Dôležité je, že Kolej Akademie ako súčasť univerzitného vlastníctva je viazaná štátnou legislatívou, ktorá je hlavným obmedzením, prečo nie je možné prijať niekoľko opatrení. Na základe zistení sa navrhli dodatočné investície do konkrétnych oblastí a preukázalo sa, že hoci bezobalový hotel si na začiatku vyžaduje značné finančné zdroje, no v dlhodobom horizonte môže hotel zaznamenať veľké úspory nákladov.

Abstract:

The main aim of the bachelor thesis is to improve the concept of the zero waste hotel with an emphasis on the environmental pillar, to propose and interpret recommendations to the university hotel named the Academy Hall which is operating in the Czech hotel industry. The literature review provides deeper insight in the given fields of Corporate Social Responsibility and Circular Economy which are vital to be understood. The methodology concerns particular areas derived from ISO 9001 and ISO 14001 standards. The analytic part is based on the qualitative research of in-depth interviews which indicates several areas for possible improvements. Illustrating a radar chart based on findings from interviews helps to reveal that the Academy Hall invested considerable funds and efforts to transform the hotel into a zero waste facility but on the other hand it still faces to areas which were not covered at all. Significant change was performed in water and energy saving policies as well as in the kitchen processes through which the amount of waste was significantly reduced. Secondary data research was done in order to specify areas which the Academy Hall could improve. The results show the Academy Hall still purchases hotel cosmetics in small plastic bottles and some kinds of separately packaged food which contribute to the amount of disposable waste. The hotel does not pay attention to promotion of hotel as a zero waste facility and does not encourage guests too much for joining to its green program. Important is that the Academy Hall as a part of university property is bound be state legislation which is the main limitation why several measures cannot be taken. Due to findings the additional investments to particular areas were proposed and proved that even though the zero waste hotel requires significant financial resources at the beginning, the hotel can experience great cost saving in the long run.
