Abstract:
Tato bakalářská práce byla vypracována na Mendelově univerzitě v Brně na Zahradnické fakultě na Ústavu posklizňové technologie zahradnických produktů. Práce popisuje princip konzervace vysokým tlakem. Vliv na jednotlivé složky potravin jako je voda, tuk, bílkoviny. Popisuje vliv vysokého tlaku na mikroorganismy.
