Abstract:
Bakalářská práce se zabývá semeny hroznů a jejich využitím ve vinařství a látkami obsaženými v semenech. Teoretická část zahrnuje strukturu hroznu a chemické složení semen. Dále termín sklizně hroznů, separaci a sušení semen a také antioxidanty a fenolické látky. V experimentální části byl proveden pokus, na který byly použity dvě odrůdy révy vinné. The bachelor thesis deals with grape seeds and their utilization in winemaking and substances contained in the seeds. The theoretical part includes the grape structure and the chemical composition of seeds, as well as the time slot of harvesting grapes, separation and drying seeds and also antioxidants and phenolic substances.
