Cieľom diplomovej práce je vytvoriť komplexný pohľad na aspekty peruánskej gastronómie – poukázať na tradičné suroviny a plodiny, ktoré sa autenticky odrážajú v novodobej gastronómii a prezentovať modernú gastronómiu ako výsledok vzájomnej synergie tradícií, vplyvov rôznych kultúr počas minulých storočí ako aj modernej implementácie do prípravy pokrmov.
