Abstract:
Bakalářská práce se zabývá hodnocením kvalitativních parametrů různých druhů mouky. V Teoretické části je popsána vlastnosti, výroba a složení mouky. V experimentální části byly stanoveny různé parametry mouky, například vlhkost, kyselost, obsah popela, obsah lepku nebo zrnitost. Tyto parametry byly mezi jednotlivými moukami porovnány a zhodnoceny.
Abstract:
The evaluation of the quality parameters of different types of flour are the aim of this bachelor's thesis. The properties, production and composition of flour are described in the theoretical part and in the experimental part, various flour parameters were determined, for example moisture, acidity, ash content, gluten content or graininess.
