Abstract:
Literární část práce se zabývá jednotlivými formami vlákniny, zdroji rostlinného původu, ve kterých se běžně vláknina vyskytuje. Dále popisuje možnosti stanovení vlákniny, rozdělení a charakteristiku jednotlivých metod.V praktické části byla provedena analýza vybraných druhů ovoce, zeleniny a potravinového výrobku na obsah nerozpustné vlákniny metodou podle Henneberga a Stohmanna. The literary part of the bachelor thesis deals with individual forms of fiber, source of plant origin, in which the fiber is present.
