Possibilities of Waste Reduction in Gastronomy and Food Industry in the Context of Circular Economy
Abstract:
The diploma thesis deals with the possibilities of waste reduction in gastronomy and food industry, taking into account the circular economy and the White Paper on Hospitality. It compares these approaches in the world and in the Czech Republic and thus provides a comprehensive overview. The benefit is a form to help the plant determine its current level and waste reduction measures.Abstract:
Diplomová práca sa zaoberá možnosťami znižovania odpadu v gastronómii a potravinárstve s prihladnutím na cirkulárnu ekonomiku a Bielu knihu pohostinstva. Porovnáva tieto prístupy vo svete i v Českej republike a poskytuje tak ucelený prehľad. Prínosom je formulár, ktorý má pomôcť prevádzke stanoviť jej súčasnú úroveň a opatrenia v oblasti znižovania odpadu.
