Alternative Options for Catering Facilities in the COVID-19 Pandemic

Abstract:

The diploma thesis "Alternative Options for Catering Facilities in the COVID-19 Pandemic" deals with the impact of the COVID-19 pandemic on the gastronomic sector. The aim of the thesis is to identify new trends in the approach to food and beverage in gastronomic facilities, and thus to prove and answer the research question what changes in customer behavior occurred and how gastronomic facilities struggled with the effects of the pandemic to survive and identify new ones. trends. The theoretical part defines the concept of gastronomy and nutrition, forms of supply, crisis of medical significance, economic dimension and the impact of the COVID-19 pandemic on the gastronomic sector. In this section, we explain how the pandemic affected not only the whole world but especially the gastronomic sector, what anti-pandemic and support measures the Slovak Republic applied. In the analytical part, we will use qualitative and quantitative research to address gastronomic operations and find out how they perceived the whole pandemic from their perspective. In the design part, we will present a strategy for streamlining the operation of Ghost kitchen based on the results of the analytical part, thus pointing out a new gastronomic trend.

Diplomová práca „Alternatívne možnosti gastronomických zariadení počas pandémie COVID-19“ sa zaoberá dopadom pandémie COVID-19 na gastronomický sektor. Cieľom diplomovej práce je identifikovať nové trendy v prístupe k ponuke jedál a nápojov v gastronomických zariadeniach, a tým preukázať a zároveň si aj odpovedať na výskumnú otázku, ďalej zistiť aké zmeny zákazníckeho správania nastali a ako gastronomické zariadenia bojovali s dopadmi pandémie, aby prežili a zároveň aj identifikovať nové trendy. V teoretickej časti je vymedzený pojem gastronómia a stravovanie, formy ponuky, kríza zdravotníckeho významu, ekonomický rozmer a dopad pandémie COVID-19 na gastronomický sektor. V tejto časti vysvetľujeme ako pandémia ovplyvnila nie len celý svet ale hlavne gastronomický sektor, aké protipandemické a podporné opatrenia aplikovala Slovenská republika. V analytickej časti pomocou kvalitatívneho a kvantitatívneho výskumu oslovíme gastronomické prevádzky a zistíme ako celú pandémiu vnímali z ich perspektívy. V návrhovej časti predložíme na základe výsledkov z analytickej časti stratégie pre zefektívnenie chodu Ghost kitchen a tým poukážeme na nový gastronomický trend.
