Cílem této bakalářské práce je shrnout poznatky o zinku a jeho úloze v lidském těle. Dále zjistit množství zinku v potravinách rostlinného původu, faktory ovlivňující jeho biologickou dostupnost a jakou úpravou potravin se využitelnost zvýší nebo naopak sníží. The aim of this bacherol thesis is to summarize the knowledge of zinc and its role in human body. Furthemore to find out amount of zinc in plant based food. What factors influence a bioavailability of zinc and how to prepare food for enhanced the bioavailability.
