Nanomaterials with encapsulated biologically active compounds for extending the shelf life of food

Abstract:

Tato bakalářská práce se zabývá problematikou nanomateriálů a jejich využití v potravinářství. Zaměřuje se na nanomateriály s enkapsulovanými biologicky aktivními látkami a aktivní obalové materiály s antimikrobiální aktivitou. Popisuje materiály vhodné pro syntézu těchto nanomateriálů a na metody, kterými může být syntéza uskutečněna. Praktická část této bakalářské práce se zaměřuje na syntézu chitosanových nanočástic s enkapsulovanými esenciálními oleji z tymiánu a oregana. Tyto nanočástice byly syntetizovány metodou iontové gelace a charakterizovány pomocí metod DLS, zeta potenciálu, SEM a AFM. S cílem pozorování jejich antimikrobiální aktivity a schopnosti prodloužit trvanlivost byly aplikovány na mandarinky. Během doby skladování bylo pozorováno úspěšné prodloužení trvanlivosti a zvýšená antimikrobiální odolnost u mandarinek, které byly ošetřeny syntetizovaným nanopostřikem.

Abstract:

This bachelor thesis addresses the issue of nanomaterials and their utilization in the food industry. It focuses on nanomaterials with encapsulated biologically active compounds and active packaging materials with antimicrobial activity. It describes materials suitable for synthesizing these nanomaterials and the methods by which synthesis can be achieved. The practical part of this bachelor thesis focuses on the synthesis of chitosan nanoparticles with encapsulated essential oils from thyme and oregano. These nanoparticles were synthesized using the ionotropic gelation method and characterized using DLS, zeta potential, SEM, and AFM methods. With the aim of observing their antimicrobial activity and ability to extend shelf life, they were applied to mandarins. During storage, successful shelf life extension and increased antimicrobial resistance were observed in mandarins treated with the synthesized nanoparticle spray.
