New trends in the use of Tea in Gastronomy

Abstract:

Cílem této bakalářské práce je představit nápoj čaj a zjistit nové trendy ve světě čaje. Zvolený problém jsem řešil studiem odborné literatury a článků. Také jsem vedl několik rozhovorů s odborníky zabývajícími se čajem. Dále jsem provedl výzkum v gastronomii, zaměřil jsem se na restaurace, které jsou dlouhodobě na základě různých žebříčků řazeny mezi nejlepší restaurace v České republice. Provedeným výzkumem jsem zjistil, že úroveň práce s čajem mimo specializované obchody a čajovny je na nízké úrovni a toto zjištění se týká i špičkových restaurací v České republice. Hlavním zjištěním této práce bylo zjištění, že se čaji nevěnuje taková pozornost, jakou by si zasloužil a že na svůj boom, který třeba v této době zažívá káva, teprve čeká. V závěru své práce jsem navrhnul několik opatření, které by mohli restauracím s nabídkou a prodejem čaje pomoci a tím i zkvalitnit služby, které restaurace nabízejí.

Abstract:

The aim of this thesis is to introduce the drink tea and discover new trends in the world of tea. Selected problem was solved studying literature and articles. Also, I had several interviews with professionals dealing with tea. Furthermore, I conducted research in gastronomy, I focused on the restaurant, which has long been based on different rankings ranked among the best restaurants in the Czech Republic. Carried out the research, I found that the level of work among specialized tea shops and tea houses is at a low level and this finding also applies to the top restaurants in the Czech Republic. The main finding of this study was the finding that the tea does not pay such attention it deserves and that its boom, which must be experiencing at this time is still ahead of coffee. In conclusion I suggested several measures that might restaurants to offer and sale of tea and thereby help to improve the services that restaurants offer.
