Abstract:
Obsahem bakalářské práce je problematika teorie a tvorby učebnic a snaha poukázat na nedostatek učebnic pro učební obor pekař. Cílem práce je zpracovat výukový text se zaměřením na využití obilovin, luštěnin a olejnin v potravinářském průmyslu, zvláště pak v pekárenství a přiblížit možnosti ekologického hospodaření a výroby biopotravin žákům tohoto oboru. Content of this bachelor thesis is the problem of theory and textbook production and the attempt to show and point out the lack of textbooks for bakers’ vocational school.
