Bread-culture in Czech republic and in Germany

Abstract:

This bachelor thesis deals with bread baking in Germany and the Czech Republic. The aim of this work is to become acquainted with the homemade bread-baking from sourdough and to bring the problem of translation of recipes from German into Czech and from Czech into German near. Both the theoretical and the practical part are closely linked. The theoretical part of the work introduces the history of bread making and the raw materials from which the bread is baked. It explains which basic material the bread is baked from, important aids for the production, the production process itself explained and a short description of the different types of bread called. In the practical part, the pitfalls in translating the German cooking recipe into the Czech language and the importance of correct translation and knowledge of terminology will be found out. The subject of the research is the text analysis and the translation of 5 German and 5 Czech recipes, which come from different periods and from different books, websites and magazine. Part of the bachelor thesis are professional glossaries. Finally, all results are summarized and evaluated.

Abstract:

Tato bakalářská práce se zabývá pečením kváskového chleba v Německu a Česku. Cílem této práce je seznámení se s domácím vlastnoručním pečením kváskového chleba a s problematikou překládání receptů z němčiny do češtiny a z češtiny do němčiny. Teoretická i praktická část jsou vzájemně propojeny a úzce na sebe navazují. Bude zde představena historie pečení chleba a suroviny, vysvětleno, co je základní surovina, z které se chleba peče, představeny důležité pomůcky k výrobě, samostatný postup výroby a stručný popis různých druhů chleba. Praktická část si klade za cíl zjistit, jaká jsou úskalí při překladu receptů z německého jazyka do českého jazyka a jak důležitý je správný překlad a znalost terminologie. Předmětem zkoumání bude textová analýza a překlad 5 německých a 5 českých receptů, které pochází z různých časových období a z různých knih, webových stránek a časopisu. Součástí bakalářské práce jsou odborné glosáře. Závěrem jsou shrnuty všechny zjištěné výsledky.
