Influence of tea infusion preparation on the content of selected elements

Abstract:

Cílem této diplomové práce bylo stanovit možné rozdíly v koncentracích mědi, zinku a železa v nálevech ze zelených a černých čajů. Literární přehled se zabývá zpracováním čaje, jeho složením a vlivem na organismus člověka. Koncentrace mědi, zinku a železa byly kvantitativně stanoveny ve vzorcích čajů a čajových nálevech pomocí atomové absorpční spektrometrie. Poté byla stanovena účinnost extrakce pro jednotlivé vybrané prvky ve vzorcích čajů. V případě celkových obsahů zinku, železa a mědi nebyl nalezen statisticky významný rozdíl mezi zelenými a černým čaji. Z vybraných prvků se v čajových nálevech ze zelených čajů nejvíce extrahovali měď (49,34 ± 3,45 %) a zinek (47,56 ± 3,33 %) a nejméně potom železo (0,9 ± 0,06 %). Podobně tomu bylo u nálevů z černých čajů, kde bylo nejvíce vyextrahováno zinku (38,07 ± 2,66 %), méně pak mědi (31,28 ± 2,19 %) a nejméně železa (4,20 ± 0,29 %).

Abstract:

The aim of this master's thesis was to determine possible differences in concentrations of copper, zinc and iron in infusions of green and black teas. The literature review deals with the processing of tea, its composition and its effect on the human body. Concentrations of copper, zinc and iron were quantified in tea samples and tea infusions by atomic absorption spectrometry. Then, the extraction efficiency was determined for individual selected elements in tea samples. In the case of total contents of zinc, iron and copper, no statistically significant difference was found between green and black teas. Of the selected elements, copper (49,34 ± 3,45 %) and zinc (47,56 ± 3,33 %) were the most extracted from green tea tea infusions, followed by iron (0,9 ± 0,06 %). The situation was similar for black tea infusions, where zinc was extracted the most (38,07 ± 2,66 %), copper less (31,28 ± 2,19 %) and iron the least (4,20 ± 0,29 %).
