Tato bakalářská práce se zabývá rolí syrovátkového proteinu ve výživě člověka. Teoretická část práce pojednává o struktuře, hodnocení kvality bílkovin a složení výchozí suroviny pro výrobu syrovátkového proteinu, tedy kravského mléka. This bachelor thesis deals with the topic of whey protein in human diet. The theoretical part is devoted to the structure, protein quality evaluation and the composition of raw material of whey protein powder production, i.e. cow milk.
