Abstract:
Tato bakalářská práce se zabývá hyperoxidací hroznového moštu a jeho vlivem na senzorický a chemický rozbor výsledných vín. Literární část pojednává o oxidačních enzymech zodpovědných za oxidační procesy v moštu. Také popisuje fenolické látky jako substráty pro oxidační enzymy a látky které úzce souvisí s těmito reakcemi. Abstract:
This bachelor thesis deals with the hyperoxidation of grape must and its influence on the sensory and chemical analysis of the resulting wines. The literary part is about enzymes responsible for oxidation processes in must.
