Tématem této diplomové práce byla problematika glutathionu ve víně a změny jeho obsahu během vinifikace. V literární části byly popsány vlastnosti glutathionu, jeho metabolické cesty a účinky na kvalitativní parametry vína. Dále byly shrnuty faktory, které ovlivňují jeho množství ve víně. The topic of this diploma thesis was glutathione in wine and changes in its content during vinification. In the literary part, the properties of glutathione, its metabolic pathways and positive effects on the quality parameters of wine have been described.
