Abstract:

ANOTACE Diplomová práce s názvem Potravinářská aditiva ve vybraných mléčných výrobcích je zaměřena na problematiku aditiv, která se přidávají do jogurtů a tavených sýrů. Teoretická část diplomové práce je věnována obecné charakteristice aditiv, ve které je zahrnut jejich význam a použití v potravinářském průmyslu, jejich značení, rozdělení do skupin podle účelu použití i možné nežádoucí reakce lidského organismu na tyto látky. Dále tato část obsahuje charakteristiku jogurtů a tavených sýrů, jejich výrobu a prospěšnost pro lidský organismus. V praktické části diplomové práce jsou uvedena a popsána jednotlivá aditiva, která se přidávají do jogurtů a tavených sýrů. Je zde zpracován seznam těchto dvou skupin výrobků, které se nacházejí v maloobchodní síti ČR. Na seznamu je uveden výrobce, produkt a obsažené přídatné látky. Závěr praktické části je věnován dotazníkovému šetření, jehož úkolem bylo zjistit, jaké je povědomí respondentů o potravinářských aditivech a jakou roli hraje výskyt těchto látek v jogurtech a tavených sýrech při jejich nákupu.

Abstract:

ANNOTATION This diploma thesis, named Food additives in chosen dairy products, focuses on the issue of additives found in yoghurts and processed cheeses. The theoretical part of the thesis is deals with to the basic characterization of food additives, including their significance and use within food industry, their labelling, classification into groups by function and also the possible adverse reactions of human body to these substances. This part also includes the characterization of yoghurts and processed cheeses, their production and their benefit to the human body. The practical part of this thesis includes the introduction and description of particular additives contained in yoghurts and processed cheeses. The reader can find a list of these two groups of additives as they are found in the Czech retail network is elaborated. The list includes the name of the producer, their product and food additives contained in it. The conclusion of the practical part is focused on a questionnaire survey with the aim to ascertain the respondents’ knowledge considering food additives and the role that they play in yoghurts and processed cheeses when purchasing them.
