Selected additives in the diet of school-age children and creation of educational material Chemistry in nutrition

Abstract:

Diplomová práce je zaměřena na tematiku chemie v potravinách. Zčásti nabízí výukový materiál pro učitele, zčásti se zabývá problematikou příjmu vybraných potravinových aditiv z konkrétních potravinových výrobků obsažených ve stravě dětí školního věku. Teoretická část obsahuje rozšiřující učební materiál pro výuku tématu chemie ve výživě obsahující také problematiku potravinových aditiv. Učební materiál je využitelný při výuce předmětu chemie a částečně i výchovy ke zdraví na základní škole. V menší míře se zaměřuje na obecnou charakteristiku, rozdělení a složky potravy. Větší pozornost je věnována cizorodým látkám obsaženým v potravinách a také metodám konzervace potravin. Nemalý prostor v učebním materiálu zabírá také problematika přídatných látek. Je uvedena obecná charakteristika, základní rozdělení aditiv a jejich nejznámější zástupci, se kterými se mohou žáci setkat, spolu s několika konkrétními, namátkově vybranými, potravinovými výrobky, které je obsahují. Učební materiál je prostoupen občasným komentářem, návrhy a návody práce se žáky pro učitele. K učebnímu materiálu jsou volně přiřazeny pracovní listy pro žáky základních škol, které se dají využít v rámci výuky bloku Chemie a výživa, popřípadě, s jistým omezením, také v předmětu výchova ke zdraví. Výzkumná část diplomové práce zahrnuje výsledky šetření, které bylo provedeno u žáků 5. - 9. tříd základních škol. Jedná se o dotazníkový výzkum příjmu vybraných potravinových aditiv z předem vytypovaných potravinových výrobků. Předmětem šetření bylo také zjistit úroveň informovanosti žáků v oblasti tzv. „éček“. Výzkumná část se dále zabývá momentálním využíváním jídelních automatů se sladkostmi na základních školách před tím, než vstoupí v platnost novela školského zákona, která omezí mimo jiné prodeji slazených nápojů a cukrovinek ve školách. Žáky nejčastěji kupované potraviny z těchto automatů jsou pak hodnoceny z pohledu přítomných potravinových aditiv. Diplomová práce tak z části navazuje na bakalářskou práci Aditiva v potravinách.

Abstract:

The diploma thesis is focused on chemicals in food. Partly it consists of teaching material for teachers, partly it deals with the problems of food intake of selected food additives from specific food products contained in food of school age children. The theoretical part includes expanding teaching materials for teaching chemistry topic in nutrition, which also includes the issue of food additives. Teaching material is useful for teaching the subject chemistry and partially may be used for health education at primary school. To a lesser extent it focuses on general characteristics, food division and food ingredients. More attention is paid to foreign substances in food and methods of food preservation. Considerable space of teaching material deals also with the issue of additives. It describes the general characteristics, the basic division of additives and their most famous representatives, with which the pupils may encounter, along with several specific, randomly selected food products that contain them. The teaching material includes occasional comments, suggestions and work guidance with pupils for teachers. To teaching materials are freely assigned worksheets for primary school pupils which can be used when teaching Chemistry and nutrition, or with certain restrictions, also in the subject health education. The research part of the thesis includes the results of the survey, which was conducted among pupils from 5th to 9th grade at primary schools. This survey research deals with the intake of selected food additives from pre-selected food products. The subject of the research was also to find out the level of awareness of pupils about the issue of so called “es”. The research part also deals with the current use of vending machines with sweets at primary schools, before the Amendment of Education Act comes in force, which among other things, will restrict the sale of sugary drinks and sweets. The most frequently bought food by pupils from these machines is then being evaluated from the perspective of additives present in food. The diploma thesis partly builds on bachelor thesis called Additives in food.
