Allergens in the gastronomy
Abstract:
This dissertation deals with food allergies and intolerances and their meaning within the gastronomic industry. It includes knowledge about their effect on human health and provide information about the prevention, symptoms, diagnosis and treatment of food allergies and intolerances. It describes problems which appears with application of food allergen legislation in gastronomic practice.
Abstract:
Táto práca sa zaoberá potravinovými alergiami a intoleranciami a ich významom v gastronomickom priemysle. Zahŕňa poznatky o ich vplyve na zdravie človeka a podáva informácie o prevencii, príznakoch, diagnostike a liečbe potravinových alergií a intolerancií. Popisuje problémy, ktoré vznikajú s aplikáciou legislatívy potravinových alergénov v gastronomickej praxi.
