Sensory analysis of selected commodities with sweeteners suitable for patients with diabetes mellitus

Abstract:

Diplomová práce se zabývá charakteristikou náhradních sladidel, jejich rozdělením a následným využitím v praxi. Dále je popsána problematika diabetes mellitus a jeho rozdělení na jednotlivé typy, které jsou diabetes mellitus 1. a 2. typu. Detailně jsou popsány klinické příznaky, diagnostika, léčba a prevence tohoto onemocnění včetně možných komplikací. Důležitým faktorem je hodnota glykemického indexu jednotlivých potravin. Dále je věnována pozornost výživě ve vztahu k diabetes mellitus a vliv COVID-19 na osoby s tímto onemocněním. Obecně platí, že čím více zdravotních problémů diabetik má, tím lze očekávat těžší průběh COVID-19 s následným zhoršením diabetes mellitus. Dále je provedena senzorická analýza, která slouží k senzorickému zhodnocení vybraných komodit. Analýzy se účastní 12 hodnotitelů z řad studentů, kteří jsou proškoleni v oblasti senzorické analýzy. Vybrané výrobky jsou vyhodnoceny dle jejich složení a výživových hodnot, přičemž se jedná o 37 pekařských výrobků, cukrovinek a nápojů. Vždy se jedná o podobné výrobky, kdy jeden obsahuje cukr a druhý sladidlo, případně nebyl doslazen ničím. Ze získaných výsledků provedeného senzorického hodnocení jsou vyhodnoceny preference hodnotitelů, přičemž je určeno, zda jde o produkty vhodné pro diabetiky či nikoliv.

Abstract:

The master´s thesis deals with the characteristics of sweeteners, their distribution and subsequent use in practice. The issue of diabetes mellitus and its division into individual types, which are type 1 and type 2 diabetes mellitus, is further described. The clinical signs, diagnosis, treatment and prevention of this disease, including possible complications, are described in detail. The value of the glycemic index of individual foods is an important factor. Furthermore, attention is paid to nutrition in relation to diabetes mellitus and the effect of COVID-19 on people with this disease. In general, the more health problems a diabetic has, the more difficult course of COVID-19 can be expected with subsequent worsening of diabetes mellitus. In addition, sensory analysis is performed for sensory evaluation of selected commodities. The analysis involves 12 evaluators from students who are trained in sensory analysis. The selected products are evaluated according to their composition and nutritional values, with 37 bakery products, confectionery and beverages. These are always similar products, where one contains sugar and the other a sweetener, or has not been sweetened by anything. From the obtained results of the sensory evaluation, the preferences of the evaluators are evaluated, while it is determined whether the products are suitable for diabetics or not.
