Diplomová práce se zabývá analýzou těkavých organických látek v balzamikovém octu pomocí plynové chromatografie. První polovina teoretické části je věnována octům, konkrétně pak jejich historii, výrobě, klasifikaci, charakterizaci a využití. The diploma thesis deals with the analysis of volatile organic compounds in balsamic vinegar using gas chromatography. The first half of the theoretical part is devoted to vinegars, specifically their history, production, classification, characterization and use.
