Abstract:

Tématem mé bakalářské práce je zbožíznalství a jeho důležitost při řízení hotelového a gastronomického provozu. Ve své práci se zaměřuji primárně na zbožíznalství masových náhražek a surovin, které lze využít při přípravě vegetariánských pokrmů. A to z toho důvodu, že vegetariánství je aktuálně velmi rozšířené a mezi vegetariány je dost potencionálních zákazníků i běžných restaurací, které nejsou zaměřeny na vegetariánské pokrmy. Téma jsem si vybrala z toho důvodu, že zbožíznalství je jednou z nejdůležitějších složek gastronomie a je důležité jak pro správné vedení, tak i kontrolu restaurací. Chci poukázat na důležitost zbožíznalství a nutnost alespoň základních informací ohledně zboží, které by měl mít každý pracovník, který se zbožím přijde do kontaktu. Pro lepší orientaci je práce rozdělena do tří částí – teoretické, analytické a návrhové. V teoretické části jsem čerpala z odborné literatury, tiskovin a internetových zdrojů. V první části své práce definuji zbožíznalství, výrobu potravin a zboží. Uvedu pro koho je zbožíznalství důležité a proč. Druhá část je věnována vegetariánství. Popíši, co to vegetariánství je a jaké jsou jeho druhy. Součástí bude i názor odborníka. Základem analytické části je dotazníkové šetření, díky kterému jsem zjišťovala, jaké povědomí o vegetariánském stravování a náhražkách masa mají lidé a zda se jim zdá dostatečná nabídka vegetariánských pokrmů v restauracích. V druhé části uvedu nejznámější náhražky masa, popíši jejich úpravu, druhy a zmíním jejich výhody a nevýhody oproti masu živočišnému. V návrhové části navrhnu na základě získaných dat možnosti jak nabídku vylepšit.

Abstract:

The topic of my thesis is commodity expertise and its importance in the management of the hotel and gastronomic operations. In my work, I focused primarily on commodity expertise of meat substitutes that can be used in the preparation of vegetarian dishes. For this reason, vegetarianism is currently very popular. There are many potential customers for restaurants that are not currently focused on offering only vegetarian dishes. The theme I chose is important for proper management and the control of restaurants. I wanted to point out that commodity expertise in the gastronomic workplace is necessary for all staff members to know basic information about the goods that they come in contact with. For better orientation, the work is divided into three parts: theoretical, analytical and presentation of the concept. In the theoretical part, I drew from literature, printed materials and online resources. In the first part of my thesis, I defined commodity expertise and the production of food and goods. I indicated for whom the knowledge is important and why. The second part is a survey, through which I discovered awareness that people have about vegetarian food and meat substitutes and what seems to them to be a sufficient supply of vegetarian dishes in restaurants. Also, in the analytical part, I described the most popular meat substitutes and how to they are prepared. I mentioned their advantages and disadvantages compared to animal meat. In the third part of my work, I described how to improve the presentation of this concept.
