Tato práce je zaměřena na stanovení vlhkosti vody v potravinách pomocí tradičních a moderních metod. Tradičních metod existuje celá řada a jsou v potravinářských technologiích běžně používány. Vyvíjeny jsou ale také metody nové, modernější, k zajištění kvalitního monitoringu vlhkosti v potravinách. This work is focused on determination of moisture in food using traditional and modern methods. There are a number of traditional methods and they are commonly used in food technology. But new methods are being developed, more modern methods are needed to ensure the quality of moisture monitoring in food.
