Poměr celkových a čistých bílkovin ve vzorcích světlých sušenek

Ratio of Total to True Protein Content in Various Kinds of Fair Biscuits
Abstract:
V této bakalářské práci byly studovány možnosti stanovení obsahu bílkovin. Studium bylo zaměřené na obsah veškerých a čistých bílkovin ve světlých sušenkách. Dále byla vypracovaná rešerše zabývající se bílkovinami. Stanovení bílkovin bylo provedeno Kjeldahlovou metodou a následně alkalimetrickou titrací.
Abstract:
This bachelor's thesis analyses possible ways of determining protein content. The analysis concentrates on the content of overall and pure proteins in lightly-coloured biscuits. In addition, the thesisi contains a research focused on proteins. Protein content was determined by means of the Kjeldahl method and, consequently, by alkalimetric volumetric analysis.
