Basic Chemical Characteristic of Chosen Bean Samples

Abstract:

Diplomová práce se zabývá základním chemickým složením vybraných druhů fazolí. V první kapitole teoretické části je popsána obecná charakteristika fazolí, jejich botanický popis a chemické složení základních živin, jako jsou bílkoviny, sacharidy, lipidy a další významné látky obsažené ve fazolích. Ve druhé kapitole jsou charakterizovány jednotlivé druhy analyzovaných fazolí a jejich složení. Třetí kapitola popisuje principy jednotlivých analytických metod, které byly v rámci diplomové práce použity. V praktické části diplo-mové práce bylo analyzováno 7 druhů fazolí z hlediska jejich sušiny (85,41 ? 90,38 %), popele (2,62 ? 3,81 %), tuku (1,57 ? 2,74 %), hrubé bílkoviny (18,46 ? 22,40 %), škrobu (43,58 ? 53,56 %), fosforu (343,34 ? 557,28 mg.100 g-1) a titrační kyselosti (7,82 ? 13,39 mmol.kg-1).

Abstract:

This diploma thesis deals with the basic chemical composition of selected types of beans. The first chapter of the theoretical part describes the general characteristic of the beans, their botanical description and chemical composition of the basic components, such as pro-teins, carbohydrates, lipids and other important substances in the beans. In the second chapter there are characterized different types of beans examined in the thesis and their chemical composition. The third chapter describes the principles of analytical methods that were used within the thesis. In the practical part of this thesis 7 types of beans were analysed in term of their dry matter (85,41 ? 90,38 %), ash (2,62 ? 3,81 %), fat (1,57 ? 2,74 %), crude protein (18,46 ? 22,40 %), starch (43,58 ? 53,56 %), phosphorus (343,34 ? 557,28 mg.100 g-1) and titrable acidity (7,82 ? 13,39 mmol.kg-1).
