Microbiology Analysis of Lyophilized Foods

Abstract:

Cílem této bakalářské práce bylo stanovení počtu vybraných indikátorových mikroorganismů ve vzorcích lyofilizovaných potravin, konkrétně v ovoci. Práce obsahuje teoretickou část, která je zaměřena na popis a charakteristiku technologického procesu lyofilizace a využití lyofilizovaných potravin. Dále je zaměřena na mikroorganismy, které se v lyofilizovaných potravinách mohou vyskytovat a metody detekce těchto mikroorganismů. Experimentální část se zabývá mikrobiologickou analýzou lyofilizovaného a sušeného ovoce. Ze získaných výsledků bylo zjištěno, že u sušeného ovoce byla menší mikrobiologická kontaminace než u lyofilizovaného ovoce. Nejvyšší počet plísní a kvasinek byl stanoven u lyofilizovaných malin. Nejvyšší počet růstově náročných bakterií byl stanoven u lyofilizovaných višní, kiwi a jablečných plátků a sporulující bakterie byly detekovány u lyofilizovaných banánových plátků.

Abstract:

The aim of this bachelor's thesis was the microbiological determination of the number of microorganisms in selected samples of freeze-dried food, specifically in fruit. The work contains a theoretical part, which is focused on the description and characteristics of the technological process of lyophilization and the use of lyophilized foods. It is also focused on microorganisms that can occur in freeze-dried foods and methods of detecting these microorganisms. The experimental part deals with the microbiological analysis of freeze-dried and dried fruit and the preparation of cultivation soils. From the obtained results, it was found that the dried fruit had less microbiological contamination than the freeze-dried fruit. The highest number of molds and yeasts was determined in lyophilized raspberries. The highest number of fastidious bacteria was determined in freeze-dried cherries, kiwi and apple slices, and sporulating spores were detected in freeze-dried banana slices.
