Comparison of the role of the hotel and restaurant manager in daily operation.

Abstract:

Cílem bakalářské práce bylo dokázat, že je nutné dosadit správného člověka na správnou pracovní pozici. V tomto případě se jednalo o funkci hotelového a restauračního manažera. Z práce jasně plyne, že manažerem nemůže být každý. Mým úkolem bylo, za pomoci metody řízeného osobního rozhovoru dokázat, že pracovní pozice hotelový a restaurační manažer v mnou vybraném hotelu Olšanka je velmi důležitá. A že obě tyto osoby jsou jak z hlediska odborných znalostí, tak z hlediska vrozených schopností na správné pracovní pozici v hotelu a jsou skutečnými manažery. Pomocí metody řízeného osobního rozhovoru se také ukázalo, že hotelového a restauračního manažera nelze vůbec porovnávat v jejich činnostech. Jejich společnou činností je řízení lidí, zde se ale jejich společné činnosti rozchází. Důvod je ten, že hotelový i restaurační manažer mají na starosti svůj svěřený úsek a oba dva úseky vyžadují zcela rozdílný přístup a činnosti. Na základě analýzy SWOT, kterou jsme s manažery vytvořili, jsem také chtěla ověřit, zda se manažeři v hotelu opravdu vyznají. Účelem zmíněné analýzy SWOT také bylo odhalit jistá úskalí a problémy, s kterými by mohli manažeři pracovat, popřípadě nedostatky úplně odstranit. Analýza SWOT pomohla také odhalit jisté problémy, na které by se mělo zaměřit přímo vedení hotelu. Veškeré zjištěné nedostatky ať už u manažerů, nebo přímo v hotelu jsem uvedla v třetí návrhové části svojí práce a věřím, že se manažeři i vedení hotelu budou snažit nedostatky odstranit v jejich vlastním zájmu. Z práce také jasně vyplynulo, že nejvíce úspěšným manažerem je takový manažer, který dokáže motivovat lidi. Motivovat lidi, by mělo být každodenní úlohou každého manažera.

Abstract:

The aim of this bachelor thesis was to prove that it is necessary to place a right person on a right work position. In this case it concerns position of a hotel and a restaurant manager. From the thesis is clear that not everyone can be manager. My goal was to prove, by the help of a method of a controlled personal interview, that the work position of the hotel and the restaurant manager in selected hotel Olšanka is essential. And that both these persons are, not only from the professional knowledge point of view but also from the inborn skills point of view, on the right position at the hotel and are true managers. By the help of the method of a controlled personal interview has also been confirmed that it is not possible, at all, to compare the hotel and the restaurant manager in their activities. Their common activity is management of people, yet there their common activities split. The reason is that the hotel manager as well as the restaurant manager has responsibilities for their own sector and both sectors require completely different approach and activities. Based on SWOT analysis, which we had developed with the managers, I also wanted to verify, that the managers know the hotel well. The target of mentioned SWOT analysis was also to reveal certain difficulties and problems, which can be worked with or completely removed. The SWOT analysis likewise helped to uncover particular problems which should be in centre of attention of top management of the hotel. All found imperfections, either in the managers or directly at the hotel, I mentioned in the third - proposal part of my thesis and I do believe that the managers as well as the top management will, for their own sake, try to eliminate the shortcomings. From the thesis is also clear that the most successful manager is the one who can motivate people well. For motivation of people should be the daily task of each manager.
