The Analysis of the Texts of Menus using the Example of Upper Palatinate Cuisine

Abstract:

Tato bakalářská práce se zabývá bavorskou kuchyní, konkrétně kuchyní z Horní falci. V práci jsou obsaženy témata pohostinství, německá kuchyně a jídelní lístky. První kapitola pojednává o historii pohostinství, a to od prvních písemných zmínek z antického Řecka a Říma, až po současnost. Druhá kapitola se zabývá historickým vývojem německé kuchyně. Počátky německé kuchyně lze pozorovat již v období germánských kmenů. Mezi další aspekty, které ovlivnily podobu dnešního německého stravování, patřilo rytířské období, humanismus, dvě světové války a v neposlední řadě také zapojení žen do kulinářské literatury a průmyslové revoluce. Kapitola končí moderní podobou německé kuchyně. V navazující třetí kapitole jsou představeny historické kuchařky a recepty z Německa. Čtvrtá část s názvem "Kuchyně česko-bavorského příhraničí" obsahuje recepty a obecnou charakteristiku pokrmů z této oblasti. Následující praktická část se soustřeďuje na jídelní lístek, jsou zde popsány jeho funkce, náležitosti a doporučený sled pokrmů. V příloze jsou příklady jídelních lístků z vybraných hornofalckých měst a sestavený německo-český slovník jídel. Slovník byl sestaven s pomocí následujících knih: Josef Nejdl - Traditionelle Gerichte des böhmisch-bayerischen Grenzgebietes, Gabriela Fatková, Andrea Königsmarková, Tereza Šlehoferová - Tachauer Kochbuch der Rezepte, Geschichten und Erinnerungen

Abstract:

This bachelor's thesis is about Bavarian cuisine, specifically Upper Palatinate cuisine. The thesis contains topics of hospitality, German cuisine and menus. The first chapter deals with the history of hospitality from the first written mentions from ancient Greece and Rome to the present time. The second chapter deals with the historical development of German cuisine. The beginnings of German cuisine can be traced back to the Germanic tribes. Other aspects that influenced the shape of today's German diet included the knighthood, humanism, the two world wars, and last but not least, the involvement of women in culinary literature and the industrial revolution. The chapter ends with the modern form of German cuisine. The following third chapter presents historical cookbooks and recipes from Germany. The fourth part, entitled "Cuisine of the Czech-Bavarian borderland", contains recipes and general charasteristics of dishes from this area. The following practical part focuses on the menu, it describes its functions, essentials and the recommended sequence of dishes. The attachment contains examples of menus from selected Upper Palatinate cities and a compiled German-Czech dictionary of dishes based on cookbooks dealing with this cuisine.
