Diplomová práce se zabývá možností přidavku enologických taninů za účelem snižování hodnot aplikovaného oxidu siřičitého. V literární části jsou popsány enologické taniny a oxid siřičitý. Experimentální část se zabývá vlivem přídavků enologických taninů na celkovou redukční sílu, antiradikálovou akitivitu a senzorické hodnocení. Abstract:
This diploma thesis deals with the possibility of adding oenological tannins in order to reduce the values of applied sulfur dioxide. In the literary part, enological tannins and sulfur dioxide are described. The experimental part deals with the influence of oenological tannin additions on total reduction force, antiradical activity and sensory evaluation.
