Abstract:

Cílem uvedené diplomové práce je zhodnotit možnosti rozvoje gastronomického konceptu Lokál v České republice konkrétně se zaměřením na České Budějovice. Na základě provedené analýzy uvádím nejvhodnější prostor, který splňuje veškeré funkční i technické parametry týkající se možnosti provozování výše uvedeného gastronomického konceptu. Svoji práci rozděluji na tři části. V teoreticko – metodologické části se zabývám především teoretickými aspekty, které souvisí s tématem diplomové práce. Obsahem této kapitoly je tedy definice gastronomie, vývoj pohostinství v České republice, veřejné stravování a jeho formy. Neméně důležitou je i subkapitola věnující se možnostem podnikání v gastronomii, kde nejvíce pozornosti věnuji franchisingu, jakožto globálně nejrozšířenější formě provozování gastronomických podniků. V analytické části se již zaměřuji na vybranou restaurační skupinu Ambiente, pod kterou výše zmíněný koncept Lokál náleží. Na úvod této kapitoly je zmíněna historie restaurační skupiny Ambiente společně se stručným popisem jejích jednotlivých konceptů. Stěžejní částí je ovšem vlastní analýza, která v prvé řadě obsahuje výběr vhodného města a dále vhodné lokality na základě zvolených kritérií. Obsahem této kapitoly je rovněž dotazníkové šetření provedené v rámci analyzovaného města. Cílem dotazníkového šetření bylo mimo jiné zjistit postoj obyvatel Českých Budějovic k pivní kultuře jako takové a rovněž zanalyzovat povědomí místních obyvatel o gastronomickém konceptu Lokál resp. restaurační skupině Ambiente. Stěžejní subkapitolou analytické části je podnikatelský plán, který obsahuje shrnutí, charakteristiku výrobu a jednotlivé analýzy (konkurence, zákazníci, odvětví), marketingový plán, plán výroby a finanční plán. V poslední návrhové části uvádím konkrétní návrhy související s další možnou expanzí gastronomického konceptu Lokál.

Abstract:

The objective of my diploma thesis is to evaluate options for the development of gastronomic concept named Lokál in the Czech Republic specifically focusing on České Budějovice. Based on the analysis I present the most appropriate space which meets all functional and technical parameters relating to the possibilities of the service the mentioned gastronomic concept . I divide my thesis into three parts. In the theoretical-methodological section I especially deal with theoretical aspects related to the topic of my diploma thesis. The content of this chapter is the definition of gastronomy, the development of the hospitality industry in the Czech Republic , public catering and its forms. Equally important is the chapter devoted to the possibilities of business in gastronomy, where I devote the most attention to franchising as globally the most widely used form of gastronomic enterprises. In the analytical part of my thesis I focus on the selected restaurant group Ambiente under which the above-mentioned concept of Lokál belongs. At the beginning of this chapter I mention the history of the restaurant group Ambiente together with a brief description of its individual concepts. However, the main part is analysis, which primarily includes the selection of the appropriate city and suitable locality based on the selected criteria. The content of this chapter is also the questionnaire made in the framework of the analysed city. The aim of the questionnaire was to find out the attitude of people in České Budějovice to the beer culture as such and also analyse the awareness of local residents about the gastronomy concept Lokál, the restaurant group Ambiente. The main chapter of the analytical part is the business plan which includes a summary, the characteristics of the production and the individual analysis (competitors, customers, industry), marketing plan, production plan and financial plan. In the last design part I present specific suggestons related to further possible expansions gastronomic concept Lokál.
