Food waste sorting in Czech restaurants

Abstract:

Tato bakalářská práce se zabývá problematikou třídění potravinového odpadu v českých restauracích. Cílem této práce je nejen nahlédnout na způsoby a přístup personalu k potravinovým zbytkům ale i seznámit čtenáře se způsoby, jak se dá nakládat s potravinovým odpadem zejména v českém prostředí a předcházet jeho vzniku. Dále se teorická část zaměřuje na problém konzumerismu a předchozí hlubší výzkumy antropologického zaměření, které se zabyvají odpadem jako takovým. K vlasnímu výzkumu je použita metoda polostrukturovaných rozhovorů se zaměstnanci vybraných restaurací, jejíž výsledky jsou upřesněny zůčastněným pozorováním účastníků v místě jejich zaměstnání. Důraz je vedle procesu třídění potravinového odpadu kladen i na možný rozdíl postoje zaměstnanců k této problematice v domácím a pracovním prostředí. V této otázce je mimo jiné zkoumáno, kdy uznavají za vhodné jídlo vyhodit a jak vnímají problematiku znečištění.

Abstract:

This bachelor's thesis concerns the problematics of sorting food waste in Czech restaurants. The work focuses not only on looking into the methods of restaurant personnel regarding leftover food but also on informing the reader about the procedure for preventing the creation of and working with food waste in the Czech Republic. Furthermore, the theoretical portion includes information on the issue of consumerism and previous in-depth studies of anthropological character, which focus on waste itself. For personal research the semi-structured interview method was employed to draw information from employees at selected restaurants, with the results of this method then being further investigated through direct observation of the participants in their place of work. Aside from the process of waste sorting, emphasis is also placed on the possibility of differing perspectives of employees toward the issue in both home and work environments. During this process they are also questioned about when and why they decide to throw away food and their concerns regarding pollution.
