Cílem bakalářské práce bylo zjištění, jaký vliv má odlistění zóny hroznů na regulaci cukernatosti a obsahu a složení kyselin v hroznech. V úvodu je popsán význam a funkce listové plochy. Následuje popis složení bobule. Základní cukry a kyseliny, jejich vývoj v bobuli během vegetace a dopad cukrů a kyselin na kvalitu vína. The main aim of this bachelor thesis was to determine the effect of the defoliation zones to regulate the sugar content of grapes and the content and composition of acids in the grapes.
