Abstract:
V diplomové práci bylo analyzováno celkem 5 druhů másel a 5 druhů roztíratelných tuků, které byly zakoupeny v běžné tržní síti. Cílem bylo stanovení vybraných fyzikálně chemických vlast-ností. Při měření texturních parametrů byly u vzorků másel a roztíratelných tuků vyhodnoceny velmi podobné výsledky. Abstract:
In the diploma thesis, were analyzed a total of 5 types of butter and 5 types of spreadable fats, which were purchased in a common market network. The aim was to determine selected physico-chemical properties. When measuring textural parameters, very similar results were evaluated for butter and spreadable fat samples.
