Abstract:
Cílem práce je shrnout dnešní poznatky o zpracování čerstvých ryb a výrobků z nich. Pozornost věnuji hlavně existujícím kontaminantům, dále pak analityckým metodám, které určují čerstvost ryb a výrobků z nich.
Abstract:
The goal of the work is summarize current knowledge on the processing of fresh fish and their products. The attention devoted mainly to existing contaminants, then analityckým methods that determine the freshness of fish and their products.
