Gluten-free Diet in Gastronomical Facilities

Abstract:

Tato bakalářská práce se zabývá celiakií. Jedná se o intoleranci na lepek, které v těle postihuje tenké střevo. Jedná se autoimunitní onemocnění, které vyvolává směs bílkovin tvořící lepek. V teoretické části jsou shrnuty projevy nemoci, formy, diagnostika a dlouhodobé komplikace. Dále se zabývá stravováním celiaků mimo domov, zaměřené na české restaurace a na ekonomickou stránku bezlepkové diety. Praktická část bakalářské práce je věnována dotazníkovému šetření v restauracích, kde byla zjišťována úroveň podávání bezlepkové stravy. Cílem výzkumu bylo zjistit, jak je personál informován o této nemoci. Výsledky jsou vyhodnoceny v praktické části práce.

Abstract:

This bachelor thesis is focused on celiac disease. It is an intolerance to gluten which af-fects the small intestine. It is an autoimmune disease caused by combination of gluten-forming proteins. The theoretical part summarizes the manifestation of the disease, its forms, diagnostics and long-term complications. It also deals with celiacs eating out of home, focusing on Czech restaurants and on the economic view of gluten-free diet. The practical part of the thesis is devoted to the questionnaire survey in restaurants, where the level of gluten-free diet service was investigated. The aim of the research was to find out how the staff is informed about the disease. The results are evaluated in the practical part of the thesis.
