Abstract:
Tato bakalářská práce je zaměřena na barvu masa a faktory, které ji mohou ovlivnit. Vlivem oxidativních změn se struktura barviva myoglobinu mění a tím i barva masa, která je ovlivněna i množstvím myoglobinu, intravitálními a postmortálními vlivy. Abstract:
This bachelor thesis focuses on the colour of meat and the factors that may affect it. Due to oxidative changes, the structure of the myoglobin dye changes and thus the color of the meat, which is also influenced by the amount of myoglobin, intravital and post-mortem influences.
